This is the perfect recipe to make ahead for lunches for the week. It’s about as simple as it gets.
The recipe requires shredded chicken that has already been cooked. You have a few options for the shredded chicken. The easiest? Buy a rotisserie chicken and shred it. The other option is to make your own shredded chicken in a crockpot or Instant Pot.
I throw 6 chicken breasts in the Instant Pot with 1 cup of water and set it to 14 minutes at high pressure. Then, I just shred it with a fork and you are good to go!
You can serve it on top of some greens, in a wrap, or in a sandwich.
Cranberry Chicken Salad
- 6 chicken breasts, cooked and shredded
- 3 celery ribs, diced
- 2 green onions, chopped
- 1/2 cup mayo
- 1/2 cup plain yogurt (greek or whole-milk)
- 2/3 cup dried cranberries
- to taste salt/pepper
- Combine all ingredients in a medium sized bowl. Mix thoroughly.
